過年包水餃(素的)

我真的好喜歡包水餃,但我對餡料的準備完全不懂,肉要打要甩,複雜又暴力(蛤?)。還好公公很會燒菜,加上小姑全家吃素,所以公公出一張嘴,我們照著做,今年還算蠻成功的!

明年記得要準備麻油和豆干。

Floating heart 野蓮(水蓮)

美濃特產「水蓮」也叫做「野蓮」就是這樣洗的。一條可以長達200公分,很長,清洗起來很麻煩。所以菜農都穿著青蛙裝,泡在大水池裡面洗。

These women are cleaning an aquatic vegetable commonly called "floating heart." I had the most difficult time finding the English name for this vegetable. It's not very commonly found, but it's grown in several places in Meinong, Kaohsiung. People usually just eat the stem, which can grow as long as 200cm. They're usually cut into 5cm long sections and then stir-fried. A little crunchy and quite fibrous (thus healthy, but not bad tasting). Since the stems are so long and difficult to clean, farmers get in chest waders and do the sorting and cleaning work in pools of water waist high.

This is probably one of the least tasty ways to eat floating heart: long and tied around a package of dumpling filling wrapped in a sheet of rice noodle.

今年台灣燈會在鹿港舉行,今天的旅遊專題就要繼續到燈會周邊玩耍。我們先到歷史悠久的龍山寺,嚐嚐鹿港人每年元宵節的時候會吃的[上元圓],然後再到彰化的果園,現採現吃最新鮮的柳丁。

人說彰化鹿港有八景,十二勝,三大古蹟,龍山寺就是其中的國定古蹟,有360年歷史。許多人來這邊拜拜,求平安也求財。而欣賞建築的人,則來這裡朝聖。

它整個建築格局採用的是一個北宋宮殿式建築。裡面包含老祖先所留下來的雕刻,彩繪,這一些都是密碼的呈現。石雕在五門殿可以說是最精彩的,裡面有經藏能讓你一本萬利,因為經常需要取財。再來,蟹夾一隻筆代表能文筆第一,狀元及第。在龍山寺最有特色的不外乎是這個戲臺。戲臺一點放射下來可以承載散發重量。這戲臺沒有任何一根鐵釘。

鹿港除了龍山寺還有很多的歷史建築。想不想到古蹟裡面喝咖啡呀?跟著我走。

藏在車水馬龍鬧區中的丁家大宅,是間百年四合院,因為丁家曾經有位進士,所以這裡也稱為「進士弟」。裡面高高掛著的燈籠,紅色的柱子,藍色的牆和門,與金色的點綴,讓人在這裡喝咖啡,吃點心時,能想像一百年前鹿港好野人生活的氣氛。

鹿港人有些過節習慣很特別,元宵節的時候不吃元宵,而吃這超Q,有點像紅龜粿的「上元圓」。

上元圓的製作過程主要是把泡過水的糯米磨成米漿,然後脫水後揉搗,再把像是紅豆,芝麻,和花生粉等餡料包進去。

這濕濕的,跟一般的湯圓真的不一樣。
對,真的不一樣。吃起來比較Q。
我們用這個虎口來,它就不會掉囉。然後把它放在葉子上,那個味道起來會更香,古早味。

這個是粽子葉。OK漂亮。
所以這是用蒸的。
外頭的元宵是用搖的。那是用粉,不是用糯米,它是用糯米粉,不是用糯米塊。

上元圓是在元月十五日,我們有分上元,中元,下元。然後正月十五是上元,所以我們特別做上元圓。包得很類似麻薯,不過裡面我們有分紅豆花生芝麻。在花生的部分,只有元宵節的時候我們才特別做一個餡,它有柑橘的味道。裡面有柑橘,冬瓜,還有芝麻,花生,十種料,我們把它和在一起。

對呀,其實這個動作不困難,就是要注意安全。
喔,有什麼特別的技巧嗎?
技巧的話,大概就是要選對好水果之後,這樣子,要快要穩要準。快穩準,這樣子。然後可以,像小朋友來採的話可以訓練他的專注力,平衡感。最好吃的季節就是在寒流下來之後。越冷水果柳丁越好吃。台灣人大家都很喜歡柳丁。單單從柳丁的名字就可以衍生出來很多吉祥的,「柳丁柳丁,圓圓滿滿」,然後「柳丁柳丁,吃柳丁家和萬事新,健康又順心」。台語又可以說「吃柳丁,發財又添丁」。最道地的吃法就是把它摘起來之後,直接現吃。現吃怎麼吃,不用刀子,直接用指甲扣下去,然後輕輕的一剝。

哇,而且這種當下聞到的香味,簡直可以用一種形容,很幸福的感覺。
很幸福,而且聞起來像花。

柳橙汁流出來了。
然後聞一下。
哇。
幸福的味道。
跟切開來不一樣。
對,切開來就是刀子切下去,果皮如果是用手剝開,它撕裂的地方是跟著它的細胞裂開,油包裂開。它現在的甜度大概已經有十二度到十三度,很新鮮。
沒有比這個更新鮮了。

龍山寺
Lukang’s historical sites make this little town a favorite for cultural and artistic travelers. This is Longshan Temple, which is over 360 years old. While some come to pray for good health and fortune, many are also here for some architectural appreciation.
人說彰化鹿港有八景,十二勝,三大古蹟,龍山寺就是其中的國定古蹟,有360年歷史。許多人來這邊拜拜,求平安也求財。而欣賞建築的人,則來這裡朝聖。
Zheng Wu-lang, Changhua Travel Expert
This is a Northern Sung style building. The stone sculptures are quite splendid. There are carvings that are to bring you fortune. There’s a crab holding a pen to help you do well in academic endeavors. The most distinguishing feature of this temple is the stage, the weight is evenly dispersed and there isn’t a single nail in this structure.

This used to be the home of a wealthy family surnamed “Ding.” A member of the family was once a presented scholar in the imperial examinations. Though the historical home is quite exquisite, the family no longer lives here, but it is open to visitors to have a look, or to sit down and have some afternoon tea.

Around the lantern festival, while most Taiwanese people will eat boiled glutinous rice balls, residents of Lukang take steamed glutinous rice balls stuffed with the likes of sweet red bean paste, sesame or peanut powder.

With the peanut flavor, we do something special around the Lantern Festival. There’s an orange and tangerine aroma. We add tangerine, winter melon, sesame, peanuts, about ten different things and mix it all together.
在花生的部分,只有元宵節的時候我們才特別做一個餡,它有柑橘的味道。裡面有柑橘,冬瓜,還有芝麻,花生,十種料,我們把它和在一起。

And while old traditions are carried on, new ones are also being created. This is a glass temple; it’s the first of its kind in the country. It’s particularly beautiful at night when lit up in various colors. When you do come, the wish you make just might be to have the chance to visit this part of the country again.
到了晚上,不妨來看看台灣第一座玻璃廟,天色暗了之後特別漂亮。今天我們許願,大家來彰化,來鹿港玩,都能開開心心,滿滿意意的回家。

天后宮
這次到了鹿港,我們要先和媽祖打聲招呼,求平安。這裡是歷史悠久的天后宮。

這座天后宮是從1725年遷建到現在。這座寺廟可以說是鹿港人信仰中心的一個地方。這裡有兩尊的鎮宮之寶,一尊來自湄洲祖廟,恭請過來的開基媽祖,到目前維持有一千多年歷史了。另外一尊是用黃金所打造的金身媽祖。在正殿的時候,你看得到整個燻得烏漆嘛黑的。其實那不是漆黑的,而是香燻黑的。所以可以了解到這一家寺廟非常的歷史悠久,香火鼎盛。

以前人家說「 一府二鹿三艋舺,台灣人錢淹腳目,鹿港人錢淹肚臍」, 鹿港曾經很繁榮,也因此有許多漂亮的古建築和老街景色。

說到古早,接著我們來品嘗這裡的百年點心!

傳統綠豆糕
這是鹿港的傳統糕點,綠豆糕,到現在還是採取手工製作。 為了入口即化,所有食材都先煮熟,然後做成粉,但就因為是粉狀的關係,如果壓不緊,還有打開時不小心,它會碎掉,師傅就得重來,整個過程真的很費工。

因此現在有些新款的傳統糕餅,採取半手工製作。

鹿港有些老字號店家走上精緻路線,令人驚艷。

在這樣的空間裡喝茶吃傳統甜點,感覺好像到了日本京都。

包子裡面包什麼?
香菇餡肉。我們包子很特別是因為吃起來感覺又有嚼勁又有湯汁。我們的吃起來不會讓你感覺肉澀澀的,不會。很順口。像我們這個都是手工做的。
肉是用什麼肉?
後腿肉。

這位做了二十年包子的老闆強調,饅頭和包子皮的麵都經過兩次發酵,所以特別綿密。而很多人說,這邊的肉包,干貝肉包,還有蓮籽菜包的餡也真材實料。

這邊是桂花巷藝術村,紙雕老師施秀雅的媽祖系列作品看了令人讚嘆。沒想到用厚紙板也能做出弧度這麼完美,這麼逼真的媽祖神像吧?

而這條龍是最新作品之一。

這一條龍呈現出來叫做龍緣滿天下。我們過年不是一定要喜氣嗎?所以把牠畫得大紅大紫。每一件作品都是以祝福為目的而創作。這種燈才會漂亮。

大家來到這裡,除了欣賞紙雕,還可以動動手,做紙雕燈籠。

這裡是護安宮,它每年更換的花燈可是廟方和二林監獄的受刑人共同打造的喔。

傳統的文化,美味的小吃,鹿港的魅力,很難抵抗,所以我們決定,下禮拜還要再來!

天后宮
The national lantern festival is taking place in Lukang this year, and we’re here to see what else there is to do nearby.
This is Tianhou Temple, which worships the popular sea goddess Mazu, both a Buddhist and Taoist deity.
今年的台灣燈會在鹿港舉辦,我們要來看看除了燈會以外,還有什麼可以玩。
這裡是祭拜媽祖的天后宮。

這座天后宮是從1725年遷建到現在。這座寺廟可以說是鹿港人信仰中心的一個地方。這裡有兩尊的鎮宮之寶,一尊來自湄洲祖廟,恭請過來的開基媽祖,到目前維持有一千多年歷史了。另外一尊是用黃金所打造的金身媽祖。
This temple was moved here in 1725. You can say it is the center of worship in Lukang. The two most valuable objects here are the Mazu statue brought from the original Mazu temple in Meizhou, Fujian when this temple was built, and the other is a statue of Mazu that is made of gold.

老街
During the Ching Dynasty, Lukang was one of the three most prosperous areas in Taiwan. Some streets and buildings from that era, now historical, still stand today.

傳統綠豆糕
The sweet mung bean cake is a common, handmade dessert. First the mung beans are cooked, then made into a powder, mixed with sugar and other ingredients and pressed by hand into a wooden mold. Because the cake is supposed to turn back into powder as soon as it is put into your mouth, it’s not so easily made. Too loose - it won’t stay together. Too tight - it won’t melt in your mouth.

Once known for trade, Lukang is now most famous for its food and number of historical buildings and traditional craftsmen. This is an artists’ village, and this is the work of paper tole expert Shi Shiou-ya. Her favorite subject is Mazu, but she’s also made a dragon for this year’s festivities.

Despite being a small town, Lukang has quite a bit to offer. So when you’re here for the lantern festival, come a little earlier or stay a little longer. You’ll be glad that you did.
雖然是個小鎮,不過鹿港的文化歷史和吃喝玩樂都很豐富。所以來看燈會,建議規劃早點來,或晚點走,給自己一點時間來認識鹿港。

I suppose working from 1330 to 0100 seven days in a row a mixed blessing. Good thing it's only once every eight weeks.

Changhua's Bawan 彰化肉圓



We're currently on assignment in central Taiwan. Today, we visited Changhua 彰化 and of course had 肉圓 bawan (Taiwanese). I'll usually have about two of those a year, or even less, but I had three this afternoon. I really was stuffed, but it was quite good! Bawan is roughly translated as "meatball," but to me, it's more like a dumpling because of the skin around the pork filling. The outside layer is made of sweet potato flour, which is a little chewy when cooked and holds everything together. First, the entire bawan is steamed and then it is then fried at a relatively low temperature. You can practically touch the oil with your bare hands and not be burnt. The frying makes the outermost part of the bawan skin a little dry and just a little bit tough, making it chewier. You can get it simply steamed or boiled in other places, but people in Changhua like their bawan chewy and oily. The sauce that goes on the bawan is also very important. There are two parts to the sauce. One part is usually made of glutinous rice flour and it is very thick and a little bit sweet. The other part is thick as well, but savory. Each restaurant has their own secret sauce recipes. Both sauces are dropped onto the bawan and the sweet and savory flavors mix in your mouth.



In this particular luxurious bawan, in addition to pork, there's also bamboo shoot, mushroom, a salted duck egg yolk and scallop. The sauce at this restaurant has peanut in it, giving it a nutty, almost sesame-ish flavor.




The young women in this picture are the great grandchildren of the man who first started selling bawan in Changhua. They were both studying in the States, (one studying to become an occupational therapist) but decided to come back when their father fell ill and thought about closing the store for good. They came back to take care of their father and to continue the family business of selling bawan. They said it's a tough and messy job, but they feel that continuing the tradition and the family business is their responsibility, and as far as I could see, they do it willingly and happily. I was really touched.
