"Baenso" in Taiwanese or "Rouyansu" in Mandarin is a Yanshui, Tainan delicacy.
Are these wontons are are they dumplings? I'm not quite sure. The (just about neon) orange colored skin is thicker than dumpling skin, but the filling of ground pork, fish paste, onion and spices is wrapped in a shape of a wonton and then fried. The lady says it tastes the best when hot soup has been poured over it and it's just a little soft, yet crispy.
